General Farm Description: Tres Estrellas Organic Farm and Garden elegantly incorporates organic, biointensive fruit and vegetable production, agroforestry, agrobiodiversity conservation and animal husbandry to create an idyllic example of ecological agriculture. The Mediterranean climate of Tecate, with light winter frosts, allows year-round production of a great diversity of plants at Tres Estrellas. In addition to growing nutrient dense, organic produce, Tres Estrellas protects the immediate and surrounding natural resources by building carbon rich soil, protecting and recycling water and preventing topsoil erosion. Tres Estrellas Organic Farm and Garden produces organic mixed fruits and vegetables, culinary and medicinal herbs, eggs, goat milk and cut flowers for three commercial kitchens. Fruits and vegetables are intensively planted in permanent raised beds that are strategically placed amongst perennial fruit and herb hedgerows. Egg laying chickens are located throughout the farm, providing organic eggs for the commercial kitchens, as well as helping to improve the health of the farm’s soil. The farm’s free-range Nigerian Dwarf goats provide the property with fire control through grazing, soil enhancement through manure production and fresh milk for consumption and cheese making.CRAFT Member Farm? The Tres Estrellas “Soil-to-Table Certification Program” is a 4-week residential program that provides training in small-scale ecological farming, farm-to-table cooking and self-reliance. Participants live, learn and work at the scenic 6-acre, 35-year old Tres Estrellas Organic Farm and Garden located in Tecate, Baja California, Mexico, one hour south of San Diego, CA. The permaculture influenced farm elegantly incorporates organic, biointensive fruit and vegetable production, agroforestry, agrobiodiversity conservation and animal husbandry to create an idyllic example of ecological agriculture. The training covers the basics of small- scale, ecological farming and farm-to-table lifestyle and cooking through a dynamic combination of presentations, group discussions, hands-on field work, hands-on cooking and food preservation, field trips and individual projects. Participants leave with new knowledge on how to start a small farm or vegetable patch, how to use farm fresh produce for food and medicine, inspiration for future endeavors in the farm or kitchen and new friends from an unforgettable group experience in the foothills of sacred Mount Kuchumaa!
Participants will receive a “Soil-To-Table Certification Program” certificate upon completion. The cost for the program is $1,500 USD. The program includes shared housing, farm fresh meals, transportation to and from San Diego International Airport, all curricular activities as well as two Saturdays at Rancho La Puerta Wellness Resort and Spa to enjoy pool time, presentations from guest presenters, fitness and wellness classes as well as delicious meals in the Rancho La Puerta dining room!

No prior experience necessary! Spanish is not necessary as the program takes place in English and when necessary, Spanish is translated to English. However, if you are looking to practice your conversational Spanish skills, there are many opportunities to do so as most of the employees on the farm are native Spanish speakers!
Educational Opportunities: The Soil-to-Table Certification Program is a combination of hands-on and in classroom learning opportunities. Participants should expect to get their hands dirty in the garden and in the kitchen, and take a deep dive into the fundamentals of ecological farming and farm to table food preservation and preparation!
Skills Desired: No prior experience needed. Spanish language skills not required. All activities are either in English or translated into English.
Meals: Organic, farm fresh meals are provided!
